I want people who do not cook to start cooking. Not someday, when they have the right knives or enough confidence—now, with what they have.

The best way I know to make that feel possible is to show the whole mess: the bad calls, the half-baked plans, the things I absolutely should have known. Because you can screw it up, learn as you go, and still put a pretty damn good meal on your own table.
